Ever since going Keto/ Low Carb, Caesar salads have been one of my FAVORITES.

Another favorite is this Southwest Chicken Salad...you have to check it out!

Anyway, it's hard to say why I rank Caesar Salad so high...I mean I've always been a huge salad lover, but I guess I just love how low carb, high fat friendly (plus full of flavor) Caesar dressing is.

But still...there are some Caesar dressings you'll find at the grocery store that aren't as healthy as any of us would like.

I'm a pretty frugal mama, so it's pretty safe to say it'll be hard for me to go back to buying Caesar Dressing off the shelves after making my own.

Ingredients

  • 1 Cup Mayonnaise
  • 1 Medium Avocado, mashed
  • 1 Teaspoon Worcestershire Sauce
  • 2 Cloves Garlic, finely minced
  • ½ Teaspoon Anchovy Paste
  • ½ Cup Shredded Parmesan
  • 2 Teaspoons Dijon Mustard
  • Juice of 1 lemon

Instructions

  1. In a medium bowl, combine all ingredients.
  2. Store dressing in an airtight container and refrigerate.

WOW! I love this dressing! I make a cup of mayo using MCT oil or a combo of MCT and avocado oil , then add an anchovy filet, etc etc. Sometimes I put in the avocado, sometimes not. We use this on all our salads.

So flavorful, so delicious.\

This sounds really good! But I am curious about the garlic. I am sure you don't just mix in 2 whole cloves of garlic, it must be chopped or minced, right? Also, do you happen to know the nutrition info on this? Thank you Carol

haha you are correct. I buy mine minced in a jar so I forgot to add that, thanks for the catch! but yes, finely minced.
