The other day I asked my Facebook friends what one Keto staple they could eat every day was.

Two of the most popular answers? Eggs and avocados.

And I understand why! These are both delicious, cheap, and easy foods that are really easy to fit into your macros.

I never thought I'd be one to say I could eat eggs every day, but truth is... I totally could.

That's why the recipe I'm sharing with you today combines BOTH for an awesome low carb, high fat meal.

This easy keto egg salad is a quick and healthy low carb lunch with plenty of protein and delicious flavor!

Cook Time 10 minutes
Total Time 20 minutes

Ingredients

  • 1 Avocado, medium
  • 6 Eggs
  • ⅓ Cup Mayonnaise
  • 1 Teaspoon Dijon Mustard
  • Splash of lemon juice (to prevent avocado browning)
  • ⅛ Teaspoon Dill (optional)
  • ½ Tablespoon fresh chopped parsley (optional)
  • Salt and pepper, to taste

Instructions

  1. Cover the eggs with water in a saucepan. Bring to a boil, turn heat off, cover and rest in hot water for 10-15 minutes. (more or less based on preference)
  2. Run under cold water and peel shells.
  3. Chop the eggs into small pieces, sprinkle with salt and pepper, set aside.
  4. Mash avocado and sprinkle with salt and pepper.
  5. In medium bowl, mix mayo, eggs, mashed avocado, mustard, lemon juice and choice of herbs
  6. Chill and serve.

This was delicious, but way too soupy for a sandwich. Will decrease the mayo next time. Loved the avacado in there. Will also try with some "Everything but the Bagel" seasoning.

Absolutely Delicious! I went ahead and added a tablespoon of white distilled vinegar and a little bit of truvia. Tasted just like potato salad without the potato. Thanks for this recipe!

I make mine with Trader Joe's Lemon Pepper grinder seasoning, dill seed, mayo and Pink Salt. A I still following the Keto diet?
