The weather has been incredible lately which means I want to spend less time in the kitchen.
I love cooking but I also love enjoying the warm sun and cool breezes at the park as late as possible.
That means I need to start prepping dinner earlier.
I saw a recipe for broccoli bacon salad on Instagram a couple weeks ago and I knew I had to try it, but with my own spicy twist, of course!
I've never been a big fan of raw broccoli but I really enjoyed this cold salad enough to make it once a week.
It goes delicious with grilled chicken or burgers, and takes less than ten minutes to put together.
Fun tip: it also tastes better the longer it sits in the fridge and soaks up the spicy dressing.
Over the weekend we had a last minute trip that was such as whirlwind we barely ate, so I knew I wanted a very filling and nutritious dinner.
I made lettuce wrapped burgers, these incredible cauliflower tots and a side of broccoli salad- perfection!

Easy Broccoli Bacon Salad
This easy broccoli bacon salad is perfect for eating outside! Less time in the kitchen, more time enjoying the nice weather!
Ingredients
- 3 cups fresh broccoli, chopped in bite size pieces
- 4 slices cooked bacon, crumbled
- 4 Tablespoons diced red onion
- 2 Tablespoons pumpkin or sunflower seeds (optional)
Dressing:
- ¼ cup mayo
- 3 Tablespoons sriracha
Instructions
- Mix all ingredients in bowl.
- Combine mayo and srirarcha for dressing and toss until all broccoli is covered.
- Refrigerate until chilled.
