I've always had trouble finding meals that are super easy AND super filling. Especially these days, with intense pregnancy hunger, there are those times when I need to eat something and I need to eat it now!

When hunger sets in like that, it can be way too easy to settle for low quality, cheap convenience foods, even if your preference is fresh, real food.

That's why I'm so excited to share with you my newest 5 minute recipe...

This recipe is based on one of my pre-Keto favorites...a club sandwich. Replacing the bread with the healthy fats from the avocado makes this recipe so much healthier and satisfying.

This recipe is fantastic fresh, but can also be the perfect leftover creation.

If you've been low carb or Keto for a while, and you're anything like me, you might probably have a decent amount of cooked chicken and bacon ready to use at all times.

5 Minute Chicken Club Stuffed Avocados

5 Minute Chicken Club Stuffed Avocados

These 5 Minute Chicken Club Stuffed Avocados make for an extremely easy, filling, and refreshing meal!

Total Time 10 minutes

Ingredients

  • 6 ounces grilled chicken, diced
  • 4 slices cooked bacon, crumbled
  • 2 avocados
  • 1 lime
  • ⅓ cup tomato, diced
  • 4 Tablespoons mayo
  • 3 Tablespoons cilantro
  • salt and pepper, to taste

Instructions

  1. Cut avocados in half and remove pits.
  2. Scoop out avocado and mash in bowl with fork.
  3. Combine mashed avocado with mayo and seasoning.
  4. Add diced chicken, bacon, tomatoes, cilantro and juice from half lime.
  5. Add mixture into avocado, sprinkle with remaining bacon and cilantro if desired.
  6. Squeeze lime juice over top and serve.

Notes

  • Cook bacon and chicken along with weekly meal prep foods to make this lunch in only 5 minutes during the weekLime juice will help prevent avocado from browning

Made this last night for dinner. Me and my wife loved it. Also my picky 14 yr son ate it, he wants it again. Woot hoot. But I just put it in a bowl. Instead of diced tomatoes I used a half can of mild rotel. This will be used in our Leto rotation of meals.

I made these last night for work today, and I am not a big avocado fan but they are delicious. I did a basic breakdown of the calories, carbs, protein and fat if anyone is interested based off of nutrition facts on the labels, and online. I did leave out the tomatoes because I am not a big fan and though I am sure it would be great here I didn't want to throw out the rest of one. This is less than scientific and I am in no way a nutritionist. I am confused. The recipe says to mash the avocado and mix all the other stuff in, but the picture shows the avocado intact. What am I missing?

The majority of the avocado is actually scooped out and mixed with the other ingredients. I just left a tiny bit in to make it more sturdy and added everything back into it for the picture :)
